Sweet Potato Hash

Add savory herbs like thyme sand sage for added flavor or add some eggs.

Ingredients

  • 2 tsp avocado oil
  • ½ onion, thinly sliced
  • 1 c sliced mushrooms
  • 1 clove crushed garlic
  • 2 large sweet potatoes, cooked and cut into ½ cubes
  • 1 c finely chopped Swiss chard
  • ½ c vegetable broth
  • 1 tsp salt

Instructions

  1. In a large skillet over high heat, add avocado oil, onion, mushrooms, and garlic. Sauté for about 8 minutes or until the onions are tender.
  2. Add the sweet potatoes, Swiss chard, and vegetable broth. Cook for 5 minutes. Add in the salt.
