Dark Chocolate Avocado Truffles

Ingredients:

  • 1 medium avocado, mashed
  • 6 ounces dark chocolate chips
  • 2 tablespoons maple syrup
  • 1/4 teaspoon vanilla extract 
  • 1/8 teaspoon salt
  • 2 1/2 tablespoons unsweetened cocoa powder (divided)
  • Assorted toppings as desired: coconut, crushed nuts, shredded coconut, sprinkles

Directions:

Melt the chocolate in the microwave or on the stove, taking care not to burn it.

Once melted, stir in the mashed avocado, brown sugar, vanilla extract, salt, and 1 1/2 tablespoons of the cocoa powder until thoroughly combined.

Place the truffle mixture into the fridge for 30-40 minutes to cool until partially set.

Use a mini ice cream scoop or spoon to portion the mixture into balls; then roll them in cocoa powder or topping of choice.

Store up to 1 week in the refrigerator.
